Tangy Pickled Red Onions

Do you ever need just a little something in your salads, sandwiches or just a side with a crunch and kick? These pickled onions will fit the bill for all these needs. So many different cultures incorporate the use of pickled onions or vegetables as a delicious compliment to any dish. I have vivid memories of my grandmother have these as a side.

It is very easy to make and store in your refrigerator.

Ingredients

  • 1 medium red onion thinly sliced

  • ½ cup vinegar

  • 1 Tbsp sugar

  • 1 tsp salt

  • 1 clove garlic, sliced

  • ½ tsp pepper corns

  • ½ tsp coriander

  • ⅛ of lemon (optional)

  • 1 Tbsp olive oil

  • 1 Tbsp chopped cilantro (optional)

Preparation

  1. Add the onions to a large glass jar

  2. Heat the remaining ingredients until the sugar is dissolved, pour liquid over the onions

  3. Once cooled, cover with lid and let stand 4 hours before refrigerating

  4. Drain liquid before serving

  5. Top with olive oil and cilantro

Tips

Will keep for more than 2 weeks in the fridge. Great on salads, sandwiches, and pulled pork.
