Spicy and Good Edamame

There are many recipes that are good for you. Sometimes “good for you” translates to boring. Not so with this recipe! Edamame is packed with protein, fiber, vitamins and minerals. The spices added to it make it fun and more delicious.

Ingredients

  • 8 cups edamame, cooked and drained

  • 1 Tbsp kosher salt

  • 1 Tbsp shichimi (Japanese spice mix)

  • 2 Tbsp white sugar

  • 1 Tbsp roasted sesame seeds

  • 2 Tbsp mirin

  • 2 Tbsp Worcestershire sauce

  • 2 Tbsp shoyu

  • 2 Tbsp coconut aminos

  • 4 large cloves garlic, minced

  • 2 Tbsp sesame oil

  • 1 tsp chili flakes or furikake - optional

Preparation

  1. Add edamame to a large pot of water. Bring to 125 degrees. Drain immediately and cool. This ensures crisp edamame..

  2. Mix all dry ingredients together (shichimi, salt, sugar, sesame seeds).

  3. In a separate bowl mix mirin, Worcestershire sauce, shoyu, aminos, garlic and sesame oil.

  4. Add dry and wet mixtures together. Pour over cooled edamame.

  5. Put the edamame in the fridge for 2-4 hours. Stir once. Serve cold. Garnish with more sesame seeds and or furikake.

Tips

If you like your edamame soft, boil for 3 minutes, then drain.. Sprinkle with more sesame seeds before serving.
