Shrimp Stuffed Tomatoes
This is such a simple and quick recipe. It adds a sense of elegance because it looks fancy.
My mom used to make stuffed tomatoes when I was a kid and I remember all her guests commenting on how wonderful they looked and tasted.
I learned early on that we eat with our eyes first. It adds to our sense of pleasure and increases the anticipation of actually tasting it. Food provides multi layers of nourishment. This recipe adds an emotional aspect because I learned to make this from my Mom. It also boosts my confidence because I already know people are going to love it. Some people will recognize that I put a little extra love in it to make it special for them. I love it when people can taste the love in the food I create. Being Hawaiian, my language of love speaks through food, and the message is deep - it speaks of connection, creativity and gratitude.


Ingredients
2 Tomatoes, cut as shown in video
8 oz cooked shrimp, chopped
¼ cup minced celery
2 Tbsp green onions, chopped
⅛ lemon squeezed - about 1 tsp
2 Tbsp mayo
1 tsp sriracha
Pinch Old Bay Seasoning
Pinch of garlic salt
Black sesame seeds for garnish
Preparation
Cut the tomato as shown in the video.
Mix all the above ingredients.
Stuff each tomato half with ¼ of the shrimp mixture.
Garnish with sesame seeds. Chill for at least an hour
Tips
You can make the shrimp mixture a day ahead. You can garnish with capers of grated cheese instead of the sesame seeds.
