Mai's Mock Mojitos
You are going to want to drink this recipe all in because it’s so good and energizing! It’s festive and carries the energy of celebration. This is a very refreshing recipe for hot summer days or a sweet Sunday brunch. You can add alcohol if you like. I love the recipe as is!


Ingredients
● 3 cups water, divided
● 1 1⁄2 cup sugar
● 2 cups packed fresh mint leaves
● 3⁄4 -1 cup fresh lime juice
● 6 cups club soda or tonic water
● Mint and sliced limes for garnish
Preparation
1. Bring 2 cups of water and 1 1⁄2 cups sugar to a boil, remove from heat. Add 2 cups of mint and let steep for 5 minutes.
2. Drain through a strainer and let cool.
3. In a large glass pitcher, combine 1 cup water, lime juice, and mint water mixture.
4. Add club soda and mix well. Serve overice cubes. Add mint and limes for garnish. Delicious and fresh!
Optional - add cranberries for Christmas or festive color. Explore with kaffir lime leaves and or sliced strawberries. Be creative!
Tips
Start with 3⁄4 cup lime juice. Add more for more of a zing. You can also adjust the sugar to your taste. I like this tangy!
