Healthy Hummus

Fresh ingredients for this robust and delicious hummus. Make it for your next gathering!

Ingredients

  • 2-15 oz cans of garbanzo beans, rinsed and drained

  • ¼ cup tahini

  • ½ cup olive oil

  • ½ cup vegetable of chicken broth

  • ¼ cup fresh lemon juice

  • 3-4 cloves of chopped garlic

  • 1 heaping tsp cumin

  • 1 tsp your favorite seasoned salt

  • ¼ cup minced sweet onion

  • 3-4 dashes of tabasco sauce

Optional: spinach, cheese and smoked paprika for garnish

Preparation

  1. Place all ingredients in a food processor

  2. Blend until smooth. Add more olive oil if you like your hummus less thick.

  3. Taste. Add more salt and tabasco if needed.

Tips

Serve with your favorite veggies. I like using jicama, carrots, tomatoes, carrots and crackers. This is a great summer snack or healthy potluck dish.


Beyond the Plate

I make my own tahini. Recently I used sesame seeds that didn’t quite smell fresh, even though the expiration date was 8 months out. The “not fresh” taste was clearly evident. I tried adding all kinds of ingredients to make it taste better, but it didn't work. Sometimes, you just have to start over- a lesson for life.
