Healthy Hummus
Fresh ingredients for this robust and delicious hummus. Make it for your next gathering!


Ingredients
2-15 oz cans of garbanzo beans, rinsed and drained
¼ cup tahini
½ cup olive oil
½ cup vegetable of chicken broth
¼ cup fresh lemon juice
3-4 cloves of chopped garlic
1 heaping tsp cumin
1 tsp your favorite seasoned salt
¼ cup minced sweet onion
3-4 dashes of tabasco sauce
Optional: spinach, cheese and smoked paprika for garnish
Preparation
Place all ingredients in a food processor
Blend until smooth. Add more olive oil if you like your hummus less thick.
Taste. Add more salt and tabasco if needed.
Tips
Serve with your favorite veggies. I like using jicama, carrots, tomatoes, carrots and crackers. This is a great summer snack or healthy potluck dish.
Beyond the Plate
I make my own tahini. Recently I used sesame seeds that didn’t quite smell fresh, even though the expiration date was 8 months out. The “not fresh” taste was clearly evident. I tried adding all kinds of ingredients to make it taste better, but it didn't work. Sometimes, you just have to start over- a lesson for life.
