I recently visited my daughter in Portland, where there are SO MANY great places to eat! They have a wide variety of ethnic food along with several fusion restaurants. This salad is a good example of a fusion recipe. It’s easy, refreshing and combines choice ingredients from two cultures.


Ingredients
Approximately 4 oz of coconut cream, whipped
1 thumb size lemon grass finely minced
6-8 cooked, peeled, and chopped beets
½ orange, peeled and chopped
Cilantro
Mint
1-2 Tbsp hot honey
Pinch of salt
Preparation
Remove the thick portion of the coconut milk at the top of the can, whip it.
Spread the whipped coconut milk in a medium bowl.
Sprinkle minced lemon grass over whipped coconut milk. Save a little for garnish
Add the chopped beets and orange
Generously garnish with cilantro and mint. Add remaining lemon grass
Add a pinch of salt, drizzle with your favorite hot honey.
Serve immediately.
Tips
I buy the already cooked beets from Costco. Plate it so that you can see a bit of the coconut cream. May sprinkle with chili flakes if you want more spice. It's very refreshing!
