Creamy Crunchy Pancakes
There are 100 ways to make pancakes and we all have our favorite kinds. However, this pancake recipe provides a nice texture and comfort in every bite. What do you think of the presentation? Does it entice you to take a bite?


Ingredients
● 1.5 cups flour
● 2 Tbsp sugar
● 2 tsp baking powder
● 1⁄4 baking soda
● 1⁄2 tsp vanilla salt or Himalayan salt
● 1/4 cup chopped pistachios
● 1 cup skim milk
● 1 cup cottage cheese
● 3 large eggs
● 1 tsp vanilla extract
● 1 Tbsp pure maple syrup
● Zest of 1 lemon
● 2 Tbsp butter, melted and cooled a bit
● 1⁄4 cup pistachios to garnish over pancakes
● Blueberry syrup, or your favorite syrup
Preparation
1. Mix the first six dry ingredients together in a large bowl
2. In a separate bowl, mix the remaining wet ingredients together.
3. Mix all ingredients together in a large bowl.
4. Pour about 1/2 cup of batter on to a large nonstick pan, on medium low to make 5” round pancakes. Makes 10 pancakes
5. Drizzle with syrup and top with nuts.
Tips
Pistachios can be replaced with praline pecans, or candied slivered almonds. Top with seasonal fresh fruit.
